I’ve read Jen from Beauty & Bedlam‘s Tasty Tuesday link-up (check it out!) many, many times, but I’ve never participated before. Since last summer I’ve lost 40 pounds, my husband’s lost 60 pounds, and my daughter has developed a sensitivity to vegetable oil. When we have conversations about this with people, we always end up talking about what we can’t eat. For those of you who are curious, that includes nearly all fast food, anything made with or fried in vegetable oil, which does include all breaded chicken products, chips, pretzels, and pretty much anything that’s pre-packaged or processed. All of those foods are due to Ariel’s vegetable oil sensitivity. Matt and I try to stay away from white-flour carbs, sweets, and unnecessarily high-calorie, unfilling foods. People at this point usually stare at us and say the same thing.
So what do you eat?
It’s a funny question to eat because we eat a lot of the same things everyone else eats, we just have to make them from scratch so that we can cook with canola oil and/or find a low-calorie alternative. One of the things we started doing on a regular basis is eating breakfast for dinner. We always enjoyed making breakfast for breakfast, but I could never convince Matt it was a good idea for dinner. Enter the Body by Vi shakes. Now that we drink our breakfast most days he’s willing to make breakfast for dinner so that we can still have some of our favorites from the breakfast menu occasionally. The following is The Flash’s favorite meal (possibly ever).
The “recipe” is pretty simple. Make scrambled eggs however you normally would (I like mine practically burnt) and throw in some pepperoni and whatever white cheese (mozzarella, parmesan, etc) you have on hand. We cook ours with canola oil instead of any kind of butter, and Matt usually quarters the pepperonis to make smaller pieces for Ariel & The Flash. Serve with some turkey bacon and cherry pomegranate juice and you’ve got a delicious, relatively low-cal (as long as you don’t have 8 helpings of eggs) breakfast–for dinner!
